Applications
The tradition reminds us that the “pigeage” of the solid part of wine during fermentation is a popular technology that has demonstrated its efficiency for improving the extraction of the colour, tannins and aromas. Precursor in the mechanisation of this ancestral practise, PIERRE GUERIN has developed a specific system in order for your wines to express and retain all their originality and uniqueness.
User benefits
- Improves the extraction of colours, tannins and aromas via more intense exchange between the solid parts and the must
- Mechanical tools are adaptable to the various grape-varieties, to preserve the wine from herbal taste and flagrances
- Avoids any temperature peaks in the centre of the solids phase
- Allows working with a total immersion of the solid parts.
